Pan sauces
Sear, deglaze, reduce, butter. The fond is flavor you already paid for.
Vinaigrettes
3 parts oil, 1 part acid, dab of Dijon, salt. Shake. Salad becomes automatic.
Emulsions
Starch or mustard + fat + motion = sauces that cling instead of split.
Steak
Dry, salt, sear hard, thermometer, rest. Five moves, done.
The reverse searkenji
Low oven until almost done, then a screaming-hot sear at the end. Edge-to-edge pink, a better crust, and the rest is built in. Kenji's most famous move.
Fish
Gentler and faster than it looks. Pull it before it's 'done' and it finishes itself.
Timing multiple dishes
Backwards-plan from the finish line. Rest and reheat are your slack.
