Taco Bowls
Ground meat browned properly — pressed flat, left alone, allowed to get brown — plus a taco seasoning you mix yourself in twenty seconds. Everyone builds their own. The house build, field-tested: beef, a can of beans warmed in the pan, fresh pico, and Spanish-ish rice from the rice cooker.

Substitutions
- ground beef → ground turkey, ground chicken, or crumbled firm tofu. Turkey and chicken release less fat; add an extra teaspoon of oil.
- homemade seasoning → a packet of taco seasoning. Zero shame. It's spices in an envelope.
- lettuce → shredded cabbage, which also lasts weeks in the fridge
- rice → tortillas, tortilla chips (taco salad), or a baked potato if you're feeling weird
- sour cream → Greek yogurt — same job, more protein
- homemade pico → a jar of salsa. The pico is a normal-mode upgrade. The jar is the tired-mode answer and it's still taco night.
- Spanish-ish rice → plain rice with lime and cilantro stirred in after. Different upgrade, same one-button effort.
Tomorrow
- Taco quesadilla — meat and cheese in a tortilla, toasted in the skillet until crispy.
- Nachos that count as dinner — chips, meat, cheese, 5 minutes under the broiler, salsa on top.
Freeze: The cooked meat freezes flat in a zip bag for 2 months. Future taco night is 5 minutes away.
Seasoned meat keeps 3–4 days in the fridge. Keep toppings separate so nothing goes soggy. Reheat with a splash of water and a lid; starches want their water back.
Make ahead
Mix the seasoning anytime — make a triple batch in a jar and you've got a house blend. Toppings can be chopped in the morning.
Keep it safe
- Ground meat gets cooked through, no pink: 160°F. Wash hands and board after shaping or handling it.
