Shakshuka with Feta

Eggs poached in a cumin-and-paprika tomato sauce, feta crumbled over, bread for dragging. The sauce is the one you already know how to build — onion, spices in the fat, a can of tomatoes, a simmer — and the eggs cook in it under a lid. One pan, breakfast for two, and the sauce keeps all week.

The idea

Eggs can cook in a sauce. Build the sauce the way you build every sauce — onion, spices in the fat, tomatoes, a simmer until thick — then make wells and put the lid on.

Why it works · Kenji
  • Onion cooked long enough to sweeten is what balances canned tomato's acid — the sauce tastes thin without it.
  • Cumin and paprika bloomed in oil for 30 seconds carry through the whole sauce; stirred into the tomatoes they'd stay dull.
  • A reduced sauce holds the wells open; a thin one lets the eggs sink and spread.
  • The lid traps steam that sets the whites from above while the sauce cooks them from below — the only way to get set whites over soft yolks in a pan this deep.
  • Feta after the heat keeps its tang; cooked in, it melts into the sauce and vanishes.

Sauce reduced 6 minutes against 12: the thin one swallowed the eggs into a single orange sheet and the whites took forever to set; the thick one held four clean pockets and the eggs were done in six minutes. Reduce until it's a sauce, not a soup, before the first egg goes in.

Substitutions

  • crushed tomatoes → a can of diced tomatoes + 1 tbsp tomato paste. Simmer 3 minutes longer; diced tomatoes hold more water.
  • bell pepper → a jarred roasted red pepper, chopped, or nothing. Jarred pepper goes in with the tomatoes — it's already cooked.
  • feta → goat cheese, a spoon of Greek yogurt per serving, or nothing. Something tangy and cold against the hot sauce is the point.
  • cumin and smoked paprika → the taco kit, minus the oregano. It's nearly the same jar lineup. Shakshuka is what the taco kit does on the weekend.
  • bread → warm tortillas or a scoop of rice. Shakshuka over rice is a breakfast bowl and a very good one.

Tomorrow

  • Reheat the sauce in the skillet, make new wells, crack in fresh eggs: a six-minute shakshuka on a weekday.
  • The sauce over pasta or rice with a fried egg on top.

Freeze: Sauce only, 3 months. Double the sauce every time you make it and freeze half — that's the real recipe.

The sauce keeps 4 days. Cooked eggs don't improve; eat them today and keep the sauce. Reheat with a splash of water and a lid; starches want their water back.

Make ahead

The sauce is the make-ahead: cook it through the simmer the night before, or pull a frozen batch. The morning is wells, eggs, lid, eight minutes.

Keep it safe

  • Runny yolks are fine for healthy adults. Cook them firm for anyone who'd rather not risk it.
  • For firm yolks, cook under the lid 10 minutes.
