Rice + Beans, Properly
Dinner 2, revisited by someone who now knows what they're doing. Same cheap ingredients, but this time you're running the pan instead of following it: spices bloomed on purpose, liquid managed like a dial, texture where you want it. It tastes better than it did two weeks ago, because you are better.

The idea
The liquid in the pan is a dial you turn, not a fact you accept: tighter with time, looser with water.
Substitutions
- black or pinto beans → kidney, white, or chickpeas. Chickpeas hold their shape more — mash a bigger share of them.
- smoked paprika → regular paprika, chili powder, or skip it and double the cumin
- lime → lemon, or a small splash of any vinegar
- yellow onion → red onion, shallots, or frozen diced onion
- toppings → literally whatever is in the fridge that tastes good on beans. This is a suggestion box, not a shopping list.
Tomorrow
- Bean tacos — beans reheated with a splash of water, spooned into warm tortillas with cheese and hot sauce.
- Cheesy bean-and-rice skillet — everything into the pan with a handful of cheese, lid on, five minutes.
Freeze: Beans freeze beautifully for 2 months in flat bags or containers. Half this batch in the freezer is a future dinner that costs you nothing.
Beans and rice keep 4 days in the fridge. The beans thicken as they sit. Reheat with a splash of water and a lid; starches want their water back.
