One-Pot Rice + Beans + Greens
Bittman's backwards pilaf: rice and beans cook together in one pot of garlicky salted water until the water's gone, then greens wilt in and butter and Parmesan get forked through. Where Dinner 14 is saucy beans on rice, this is fluffy rice threaded with beans. Same pantry, one pot to wash.

The idea
The same four pantry ingredients make two completely different dinners; technique is the recipe. Measure the water by depth and the pot times itself.
Substitutions
- white beans → black beans, pintos, or chickpeas. Black beans will tint the rice purple-gray. Tastes great; looks goth. Madeleine may be into it.
- kale or chard → spinach, frozen spinach (squeezed), or frozen peas. Peas go in for the last 3 minutes too. Skipping greens entirely is also allowed.
- butter + Parmesan → olive oil + lime + cilantro, plus a pinch of cumin with the garlic. This is the Latin fork in the road — same pot, points the dish at Dinner 14's flavors.
- Parmesan → any hard cheese, or crumbled feta at the table
Tomorrow
- Crispy rice-and-beans cakes — pack cold leftovers into patties, pan-fry in olive oil until crusty, fried egg on top.
- Burrito filling — rolled into tortillas with hot sauce and cheese.
Freeze: Freezes fine for 2 months, though the greens fade. Flat bags, as always.
Keeps 4 days in the fridge. It tightens as it sits and fluffs back with heat. Reheat with a splash of water and a lid; starches want their water back.
