Mushroom, Spinach, and Gruyère Omelet
The omelet is the soft scramble with two changes: stop stirring early, and fold it around something. Mushrooms browned hard and dry first, spinach wilted into them, Gruyère melted in the fold. Three eggs in one pan, fifteen minutes, ~27 grams of protein, and almost no carbs unless you want toast.
15 minutes · Low cleanup · Protein-forward · One pan · serves 1 · ~27g with three eggs and Gruyère

The idea
An omelet is a scramble you stop early and fold. Cook the filling first and dry, because a wet filling turns the fold back into a scramble.
Why it works · Kenji
- Mushrooms are around 90% water — browning can't start until it's gone, so high heat, space, and salting last are what make them taste like meat instead of steam.
- Pull-and-tilt sets the eggs in thin layers, so the omelet is firm enough to fold and still custardy inside.
- Stopping while the top is glossy is carryover cooking: the fold and the melting cheese finish it.
- A dry filling is the difference between an omelet and a scramble with vegetables in it — water from the filling breaks the fold.
Three eggs is the ceiling for a 10-inch pan. Four becomes a slab too thick to fold, which is a frittata you now have to flip. For two people, make two omelets back to back — each one takes three minutes once the filling's done.
Substitutions
- Gruyère → Swiss, sharp cheddar, goat cheese, or feta. Anything that melts, or anything crumbly you'd rather have in pockets.
- mushrooms and spinach → any cooked vegetable in the fridge, warmed through in the pan. Last night's roasted broccoli or peppers, chopped: this is the frittata's rule in a smaller shape.
- 3 eggs → 2 eggs. A thinner omelet that sets in 60 seconds. Easier to fold, if anything.
- butter → olive oil. Different flavor, same physics.
Tomorrow
- Doesn't keep as an omelet. The mushroom-spinach filling keeps 3 days and makes the next one a five-minute breakfast.
The omelet doesn't keep. The filling does — a container of browned mushrooms is a good thing to have in the fridge.
Make ahead
Cook a double batch of the filling on Sunday; the weekday omelet becomes eggs, a scoop of cold filling warmed in the pan, cheese, fold.
Keep it safe
- The eggs are set through; the glossy top finishes in the fold. If the inside is still liquid when you cut it, 30 more seconds folded in the pan.
