Lentil Soup
Your first dried legume, and it's the easy one: lentils cook from dry in half an hour, no soaking, no folklore. Aromatics and cumin, lentils and stock, a lazy simmer, then the part that makes it worth eating: a big finish of salt, lemon, and olive oil at the very end.

The idea
Soup tastes flat right up until the last thirty seconds. Salt, then lemon, then taste: that pass is where it becomes good.
Substitutions
- brown or green lentils → French green (Puy) lentils. Firmer and fancier; same method, maybe 5 extra minutes. Red lentils work too but dissolve — that version is a purée, also good.
- carrots → celery, a diced potato, or skip and go all-lentil
- cumin → curry powder, smoked paprika, or a teaspoon of dried thyme for a different direction
- lemon → red wine vinegar or sherry vinegar — a teaspoon at a time
- spinach → kale (add 10 minutes earlier), or nothing
Tomorrow
- Lentils over rice — reheated thick, ladled over leftover rice with a fried egg on top.
- Lentil soup, day two — it thickens overnight into almost a stew; loosen with water, re-brighten with a fresh squeeze of lemon, and it's arguably better than tonight.
Freeze: Freezes perfectly for 2–3 months. Flat containers, labeled, and future-3am-you has a hot dinner that requires only a stove.
Keeps 4–5 days in the fridge. It thickens as it sits; re-season with a pinch of salt and a little lemon, since cold dulls flavor. Reheat with a splash of water and a lid; starches want their water back.
Make ahead
This is the definition of make-ahead — cook the whole pot whenever the day allows and reheat at dinnertime. Save the lemon for serving time.
