Halloumi, Avocado, and Egg Bagel
Halloumi won't melt, so it sears like a steak: two slabs in a dry pan until deep gold, then eggs fried in the same pan, stacked with mashed avocado on a toasted bagel. Twelve minutes, one pan, about 30 grams of protein, and it holds together in one hand on the way out the door.

The idea
Halloumi doesn't melt, so you cook it like a steak: dry it, sear it hard, flip once. Any cheese that holds its shape in the pan is a protein, not a topping.
Why it works · Kenji
- Halloumi's curds are cooked in whey before salting, which locks the protein structure so it holds its shape above the temperatures that melt other cheeses.
- Because it doesn't melt, it can take steak heat: the surface dries, browns, and crisps while the inside only softens.
- A pressed-dry slab browns in two minutes; a wet one spends those two minutes steaming off brine and comes out gray.
- Halloumi keeps its fat where feta renders it, so this recipe needs butter for the eggs and the feta one doesn't.
- The cheese carries the salt for the whole sandwich, which is why the eggs are the only unsalted eggs in the library.
Half-inch slabs against quarter-inch: the thin ones brown fast but turn leathery by the time the second side is done. Half an inch stays soft in the middle with a real crust on both faces. Slice thick.
Substitutions
- halloumi → crumbled feta. That becomes a different technique — feta renders and the eggs fry in it — and it has its own recipe: Crispy Feta Eggs on Avocado Toast.
- halloumi → paneer, two slabs. Same won't-melt family. Sear it the same way; it's milder, so the chili crisp stops being optional.
- bagel → an English muffin, thick sourdough, or a warm tortilla. A tortilla turns it into a wrap, which travels even better.
- avocado → a thick spread of hummus or Greek yogurt. Either one does the glue job and adds a few grams of protein.
- chili crisp → hot sauce, a thread of honey, or nothing. Honey on seared halloumi is a Cypriot move, not a stretch.
Tomorrow
- Doesn't keep assembled. Seared halloumi reheats in a dry pan for a minute a side and is nearly as good, so you can cook four slabs and bank two.
The open block of halloumi keeps 2 weeks in its brine, in a sealed container. The avocado half keeps a day face-down with lemon on it.
Make ahead
Slice and dry the halloumi the night before and keep it between paper towels in a container. Morning you: pan on, done in eight.
Keep it safe
- Runny yolks are fine for healthy adults. Cook them firm for anyone who'd rather not risk it.
- For set yolks, the 30-second lid becomes a 90-second lid.
