Halal Cart Chicken and Rice
Kenji's most-cooked recipe ever, reverse-engineered from the carts outside his New York office: spiced thighs chopped small so every piece gets browned edges, turmeric rice, and a white sauce that is mostly mayonnaise and refuses to be less than the best part. This is the cart cooks' dish.

The idea
Surface area is flavor: chop it small, brown it twice. And thighs play by their own temperature rules; past 170°F they get better, not worse.
Why it works · Kenji
- Thighs carry fat and collagen, so 175°F makes them tender where it would ruin a breast — the cut is the safety margin.
- A 15-minute lemon-garlic marinade seasons the surface, and the surface is where all the browning flavor forms anyway.
- Chopping the cooked chicken and re-hitting the pan multiplies browned surface area — the actual cart secret.
- Turmeric and cumin bloom in the rice's butter, because spice flavor dissolves in fat, not water.
- The white sauce is mayo + yogurt + vinegar + sugar: fat for body, acid and sugar for the addictive part.
Kenji tested long marinades against short ones for this dish — overnight bought almost nothing over 15 minutes, because marinades barely penetrate past the surface. Spend the time browning instead.
Substitutions
- chicken thighs → breasts, chopped after cooking. Fine in a pinch — but pull them at 155°F and skip the re-crisp minute, or they'll dry out. Thighs are genuinely better here.
- yogurt (in the sauce) → more mayo plus an extra teaspoon of vinegar. The carts likely don't use yogurt anyway.
- coriander → more cumin, or a little paprika
- romaine + tomato → any crunchy raw vegetable — cucumber, shredded cabbage. The bowl wants one cold crisp thing against the hot rice.
Tomorrow
- The exact same bowl, reheated — this is one of the great next-day lunches; keep the sauce separate and cold.
- Wrap it: chicken, rice, lettuce, white sauce in a warm tortilla.
Chicken and rice keep 3–4 days. White sauce keeps a week and you will find other uses for it — it's good on nearly everything. Reheat with a splash of water and a lid; starches want their water back.
Make ahead
The white sauce and the marinade both improve with a few hours' head start. Marinate in the morning, sauce whenever — dinner becomes a 30-minute assembly.
Keep it safe
- Raw chicken touches nothing you'll eat raw. Wash hands, knife, and board with soap before moving on. Done is 155°F on the thermometer; it rests to 160.
- Chop the cooked chicken on a clean board, not the one the raw thighs sat on. Thighs are safe from 155°F and better at 175°F.
