Fried Rice From Leftovers
The best use of yesterday's rice ever invented, and your first dinner that's a framework instead of a recipe. The ingredients are suggestions; the sequence is the recipe: eggs, aromatics, protein and vegetables, rice pressed flat to crisp, then everything back together with soy and sesame.

The idea
Leftovers aren't a compromise; they're an ingredient. A sequence with open slots beats a recipe with fixed ingredients.

- Fried rice is really dried rice: crisping needs a dry surface, and the fridge dehydrated every grain overnight.
- Press-and-wait beats constant stirring — toasting needs contact and stillness, even at stir-fry speed.
- Cooking in stages (eggs out early, eggs back late) gives every ingredient exactly its own cook time in one shared pan.
- Sauce poured down the hot pan wall flash-caramelizes on the way in instead of soaking cold into the rice.
The day-old-rice rule, tested: it's about dryness, not age. Fresh rice spread thin for 15–20 minutes fries nearly as well — the fridge is just the lazier road to the same dry grain.

Substitutions
- vegetables → frozen peas or corn, diced carrot, cabbage, leftover roasted anything. Raw and sturdy goes in earlier; already-cooked just needs heating.
- protein → leftover chicken, ham, tofu, shrimp, or nothing — extra egg carries it alone
- soy sauce → tamari, or half soy half oyster sauce for something deeper
- scallions → a little diced onion in with the garlic, or skip entirely
- sesame oil → skip it — still good, just less aromatic
Tomorrow
- Fried rice, re-fried — a few minutes in a hot oiled pan brings the crisp back better than any microwave.
- Fried-rice breakfast — reheated with a fresh fried egg on top, runny yolk as the sauce.
Keeps 3 days in the fridge. Reheat in a hot, dry pan so the crust comes back. The microwave makes steam.
Keep it safe
- Use rice that went into the fridge within a couple hours of cooking, and give tonight's leftovers one reheat, not several. Cooked rice isn't a leave-it-out food.
- If your protein is leftover meat, get it fully hot in the pan, not just warm.
