The soft scramble's loud sibling. Olive oil hot enough that the whites blister into browned, lacy edges while the yolk stays liquid. Then the real move: put them on whatever the fridge is holding — last night's rice and beans, yogurt with hot sauce, a tortilla. A ~25 gram breakfast in six minutes.

The idea

A fried egg turns any leftover into a meal. Heat level is a choice, not a rule: low makes custard, high makes crackle, and both are correct.

  • Water boils at 212°F and crisping starts past 300°F — generous hot oil rushes the whites' edges through the boil-off and into browning before the yolk can set.
  • Basting with tilted-pan oil cooks the top from above: set whites, unbroken liquid yolk, no flip required.
  • The oil left in the pan is now flavored fat — pouring it over the top is a sauce you already made by accident.
  • The crispy fried egg isn't an overcooked egg; it's a different dish (Spanish cooks have fried eggs this way forever) — lacy browned edge, liquid center, both on purpose.

Fats for fried eggs, tried side by side: olive oil is the crispy-edge champion — it takes the heat, froths around the whites, and leaves flavor butter can't match without burning.

Substitutions
