Crispy Feta Eggs on Avocado Toast
Feta scattered in a dry pan, eggs cracked on top, and the cheese does the frying: its fat renders, its edges go lacy and brown, and the whole thing slides onto avocado toast as one crisp-edged piece. Ten minutes, one pan, the best effort-to-breakfast ratio in the house.

The idea
Cheese is a fat and a crust in one. Put it in the pan first, and whatever you cook on it fries in its drippings and comes out wearing it.
Why it works · Kenji
- Feta is brined and relatively dry, so over medium heat it renders fat and browns rather than puddling the way a melting cheese would.
- The rendered fat is the frying medium — the egg whites fry in cheese drippings, which is why there's no oil in the recipe.
- A nonstick pan isn't a preference: a cheese crust bonds to bare steel and comes up in shreds.
- Feta carries enough salt to season the eggs; the honey and lemon are there because salt alone reads as flat.
Block feta crumbled by hand against pre-crumbled from the tub: the tub stuff is coated with anti-caking powder and browns unevenly. Block feta fuses into one clean sheet. Buy the block.
Substitutions
- feta → two 1/2-inch slabs of halloumi. The opposite technique: halloumi keeps its fat instead of rendering it, so it sears like a steak and the eggs fry in butter afterward. That version has its own recipe — Halloumi, Avocado, and Egg Bagel.
- sourdough → a toasted bagel, a warm tortilla, or leftover rice. Rice under feta eggs is a breakfast bowl. Nothing about this needs bread.
- avocado → a thick spread of Greek yogurt or hummus. Cold yogurt under hot eggs is the crispy-fried-egg trick again, and it adds protein.
- honey → chili crisp, hot sauce, or nothing. Chili crisp is the spicier version and arguably the better one.
Tomorrow
- Doesn't keep — the crust is a ten-minute window. Cook two eggs, not four.
Doesn't keep. The other half of the avocado keeps a day face-down with lime on it.
Make ahead
No. The whole recipe is shorter than reheating would be.
Keep it safe
- Runny yolks are fine for healthy adults. Cook them firm for anyone who'd rather not risk it.
- For set yolks, the 30-second lid becomes a 90-second lid.
