Chicken Soup From Scratch-ish

Real chicken soup: sweated aromatics, store-bought stock made to taste homemade, thighs poached gently in the broth and shredded, noodles, lemon. The 'ish' is the stock, and the 'ish' is fine. This is the pot you make when someone in the house needs taking care of.

The idea

A simmer is a lazy bubble, and lazy is what you want: it makes tender chicken where a boil makes rubber. The last pinch of salt matters more than the first.

Substitutions

  • boneless thighsbone-in thighs, if you want richer broth. Optional upgrade only: simmer them 25 minutes instead of 15, then pull the meat off the bones on the cutting board and shred it. Only shredded meat goes back in the pot — you never eat around a bone, ever.
  • egg noodlesrice, small pasta shapes, or orzo. Rice takes ~15 minutes in the broth; start it before pulling the chicken.
  • celeryfennel, leek, or nothing
  • dill/parsleydried thyme (a pinch, added with the stock), or skip herbs entirely

  • Soup again, better — day two is peak chicken soup. Reheat gently, fresh squeeze of lemon in the bowl.
  • Chicken-noodle rescue lunch for Madeleine — a big mug of it, one hand, no table required.

Freeze: Freezes beautifully for up to 3 months — but if you plan to freeze a batch, portion it out BEFORE adding noodles and freeze brothy; noodles turn to mush in the freezer. Cook fresh noodles into the thawed pot in 7 minutes.

Keeps 4 days in the fridge. The noodles keep drinking broth overnight; thin day-two soup with a splash of stock. Reheat with a splash of water and a lid; starches want their water back.

Make ahead

The whole pot, a day ahead — it genuinely improves overnight. Or just prep the vegetables in the morning and the evening becomes 40 mostly-idle minutes.

Keep it safe

  • Raw chicken touches nothing you'll eat raw. Wash hands, knife, and board with soap before moving on. Done is 155°F on the thermometer; it rests to 160.
  • If a piece looks translucent inside when shredding, back into the hot broth for 5 minutes.
  • Ladle a big pot into smaller containers to cool it; a deep pot takes hours to get cold.
