Substitutions
- leftover chicken → rotisserie chicken, leftover taco meat from dinner 3, or just beans and cheese. A bean quesadilla is a classic, not a compromise.
- flour tortillas → corn tortillas — smaller, so make more; they crisp even better
- salad greens → shredded cabbage (keeps for weeks), or sliced cucumber with the same dressing
- lime → lemon, or a splash of any vinegar in the dressing

- Re-crisped quesadilla — 2 minutes per side in a dry skillet brings a fridge quesadilla fully back to life. Better than microwaving by a mile.
- Chopped quesadilla salad — cut a leftover quesadilla into strips over dressed greens. Croutons, but cheese-filled.
Cooked quesadillas keep 3 days in the fridge. Leftover vinaigrette keeps a day on the counter or a week in the fridge; shake before using. Reheat in a hot, dry pan so the crust comes back. The microwave makes steam.

Quesadillas can be built (not cooked) a few hours ahead and stacked in the fridge. The vinaigrette holds a week — make double and salad becomes a zero-thought side all week.
