One-Pot Chicken Biryani
Bittman's shortcut into a dish people treat as unattainable: onions cooked golden in butter, whole spices bloomed, basmati toasted in that butter, then chicken and stock in one pot with the lid on. Twenty minutes you're not allowed to look at, and you've made biryani on a Tuesday.

The idea
Intimidating dishes are usually familiar techniques wearing better spices. A sealed pot on low heat is a technique, not a leap of faith.
Why it works · Kenji
- Blooming whole spices in butter works because their aromatics are fat-soluble — one minute in hot fat extracts what an hour of simmering in water can't.
- Rinsing the basmati strips loose surface starch, and toasting it in fat firms each grain's exterior. Together, that's why the grains cook up separate instead of gluey.
- The sealed lid is a small steam engine: exactly enough water, nowhere for it to go. Every peek vents the steam and resets the clock.
- Deep-golden onions are caramelization doing the heavy lifting — pale onions make a pale-tasting pot.
That toasty bottom layer has a name in at least three cuisines — tahdig in Iran, socarrat in Spain, okoge in Japan. Proof it's a feature, not a burn.
Substitutions
- boneless thighs → bone-in thighs or drumsticks. More flavor, more time: use 3 cups stock and simmer 25–30 minutes.
- whole spices → 1.5 tsp garam masala stirred in with the ginger and garlic. Less aromatic drama, same warmth. Nothing to fish out at the end, either.
- basmati → any long-grain white rice. Fine, just not the same perfume. Don't use short-grain — it wants to be sticky.
- chicken stock → water + an extra ½ tsp salt
- almonds → cashews, pistachios, or nothing
Tomorrow
- Biryani fried rice — day-old biryani hard-fried in a skillet with an egg cracked in. Arguably better than night one.
- Biryani burrito-ish wrap — warm rice and chicken rolled in a big tortilla with yogurt and hot sauce. Not traditional. Extremely good.
Freeze: Freezes well for 2 months in flat containers. Thaw overnight.
Keeps 4 days in the fridge. Reheat with a splash of water and a lid; starches want their water back.
Make ahead
You can do everything through the spice bloom a day ahead, refrigerate the pot, and finish from the chicken step. But honestly it's a one-hour dish start to finish.
Keep it safe
- Raw chicken touches nothing you'll eat raw. Wash hands, knife, and board with soap before moving on. Done is 155°F on the thermometer; it rests to 160.
- After 20 minutes at a simmer plus the rest, the chicken will be past 155°F. The thermometer is right there if you want certainty.
