- Browning is the Maillard reaction: hot, dry protein surfaces rearranging into hundreds of new roasty flavor compounds. Wet or crowded chicken never gets there — it just steams gray.
- The pan preheats empty because water can't pass 212°F and browning starts around 300°F — surface moisture has to flash off before any color can happen. The sizzle is that water leaving.
- Not touching the pieces matters: crust needs sustained contact with hot metal, and every stir resets the clock.
- The sauce is fat + acid + salt — the three things that make a rich, starchy bowl taste finished instead of heavy.

Substitutions
- chicken → leftover rotisserie chicken. Skip the browning steps; warm it in the pan instead.

Chicken and rice keep 3–4 days in the fridge. Store the avocado in your stomach; it doesn't keep. Reheat with a splash of water and a lid; starches want their water back.

Keep it safe
- Raw chicken touches nothing you'll eat raw. Wash hands, knife, and board with soap before moving on. Done is 155°F on the thermometer; it rests to 160.
